I personally think the hardest thing to give up when changing to a healthier grain-free way of eating, is losing the BREAD! We use bread as a vessel to carry other foods, for toast and sandwiches, dipping into soups, stews, wiping up gravy, plus it's a cheap way to fill your family. I've always been about reproducing family favourites without thinking we are being deprived or missing out. You will find many bread and pastry recipes in my cookbook but I haven't finished making yummy grain-free bread options just yet, new ideas are always popping into my head. I'm excited to share with you my Seeded Dinner Rolls (nut free), Garlic and Coriander Flat Bread (with a nut free option) and my Pumpkin Sandwich Bread.
Do you know why wheat is avoided in a Paleo diet? Wheat is not the same as it was many years ago, as it has been modified to stop pests from eating it, yet we eat it too - pesticides and all. If it is killing the bugs what is it doing to our bodies and our children's? Wheat contains Phytic Acid, a mineral blocker that prevents absorption of calcium, magnesium, iron, copper and zinc. Wheat is a common culprit for bloating, diarrhea, constipation, skin rashes, Irritable Bowel Syndrome, Leaky Gut, Celiac disease, migraines and the list goes on. Wheat is starch which turns to sugar, then fat in our liver. I suffered from Fatty Liver Disease for many years. During that time doctors didn't have any answer on how to reverse it and it wasn't until I did a huge amount of research and removed certain foods, it eventually healed. By removing wheat, gluten and grains from my diet was the main force behind reversing my fatty liver, along side removing processed foods and unrefined sugars.

It's not easy making a paleo bread recipe without ground nuts in it, but I'm so happy with how these deliciously yummy nut free dinner rolls turned out. Flat bread is generally used to accompany Indian dishes or to scoop up the gravy from a stew or casserole, but this yummy recipe is perfect on it's own. Drizzle my Garlic and Coriander Flat Bread with a little avocado oil or dip into a mixture of avocado oil, balsamic vinegar, and a pinch of sea salt. Yum, Yum!! (My hubby has started popping a piece into the toast and topping it with scrabbled eggs for breakfast and it's delicious). This is a sandwich bread using grated pumpkin, which not only means you get more nutrition but you get a delicious, tasty and moist loaf of bread. Enjoy toasted or to accompany a hot bowl of soup. You may also like this variation: add 3/4 teaspoon dried oregano and 1/4 cup sliced Kalamata olives. It's ideal for dipping into olive oil and dukkah. Place sliced on a board with dipping bowls of different oils, cold sliced meats, olives, fermented veggies and salad for a yummy week-end lunch. Click here for the recipe.
