These yummy light and fluffy dairy free Honey and Lemon puddings, don't only just taste delicious but are so good for you. I wanted to create a treat, that was soothing and healing for winter when there are colds or flu hanging around. These puddings contain the preventative ingredients needed to fight off winter colds, honey, lemon, ginger and turmeric. My lemon and honey puddings, can be made into snack sizes ready to grab from the fridge when an immune boost is required or they can be served as a light dessert after a heavy winter meal. This is why I've used these ingredients in my puddings:
Lemons are an excellent source of vitamin C. The juice from one lemon has approximately 40mg of vitamin C, which is almost 100% of the RDI for adults. Vitamin C is well know to have benefits when you have a cold but did you know, it strengthens blood vessel walls, promotes wound healing and promotes iron absorption. Lemons are one of the most important antioxidants in nature. Fresh lemon zest, is the outer peel, it is rich in an anti-oxidant chemical called rutin. (Always scrub the skins before grating). Lemons also contain essential nutrients (e.g. niacin, choline), fatty acids and amino acids, these can't be synthesized by the body, thus must be obtained from a dietary source.
Ginger has an aromatic and warm spicy flavour. Ginger contains very potent anti-inflammatory compounds and has immune boosting action, that is known to help fight off infections. It is also know for settling the stomach when feeling ill and for it's anticancer properties. Some recent research has shown ginger can help with the thyroid as it's rich in zinc, magnesium and potassium, which are nutrients that the thyroid requires (it's best to use fresh to reap the full benefits). Ginger helps with pain, it blocks the pro-inflammatory prostaglandins (hormone-like chemicals), it may also be useful in helping people who suffer from the pain of migraines and arthritis.
Honey is a natural sweetener that contains hidden nutrients and medicinal value that's been used for centuries. Raw honey is loaded with antibacterial and antifungal properties, perfect to sooth and heal a sore throat. It also contains vitamin B6, thiamin, niacin, riboflavin and the minerals, calcium, copper, iron, magnesium, manganese, potassium and zinc.
Turmeric has been used to treat a variety of internal disorders, such as throat infections, common colds, arthritis, inflammation, liver ailments and digestive disorders. Turmeric is a natural antibiotic. It is also used topically to cleanse wounds or treat skin sores. The dark yellow colour of turmeric helps to give the nice colour to this pudding.
By adding blueberries on top, you get an additional boost of anti-oxidants and the lovely strong coloured indigo berries are an excellent source of vitamin K and manganese, also a good source of vitamin C, fibre and copper.
